As much as I love chocolate, I never liked fudge because it always tasted so grainy and sugary to me. Then I tried my neighbor’s fudge, and it was perfect! Smooth and creamy, and not sugary sweet. And — it is best frozen!
3 c. semi sweet chocolate chips
1 – 14 oz. can sweetened condensed milk
1 1/2 t. vanilla
pinch of salt
1/2 c. walnuts or pecans
(Optional: 1 t. instant coffee granules)
Line a 9 x 9 inch square pan with waxed paper or parchment paper. Set aside.
Combine chips and milk in large heat proof mixing bowl. (Add coffee granules, if using.)
Place bowl over lightly simmering water (2″ depth). Stir until chips are thoroughly melted. Remove from heat and stir in remaining ingredients.
Spread mixture evenly into prepared pan. Let cool.
Refrigerate 3-4 hours before cutting.
Cut fudge into small squares, put into zip lock bag and keep in freezer. This fudge is very good right out of the freezer!
