6 oz. chopped spinach, squeezed dry
6 oz. feta cheese, crumbled (or goat cheese)
1/2 c. mayonnaise
1 clove garlic, minced
1/4 c. flour
1/2 t. paprika
4 strips bacon
4 chicken breasts
Preheat oven to 325 degrees.
Combine spinach, cheese, mayonnaise and garlic. Set aside.
Mix flour and paprika. Set aside.
Line baking sheet with foil and place rack on top.
Cut bacon in half, lengthwise.
Trim fat off chicken breasts.
Using sharp paring knife, cut deep pockets in the chicken and stuff with 1/4 spinach mixture.
Close pocket and secure with toothpick.
Dust chicken with the flour mixture.
Wrap 2 strips of sliced bacon around chicken, placing ends on the bottom.
Bake 50-55 minutes, or until chicken is done.
Remove from oven, loosely tent with foil, and let rest 10 minutes.
Remove toothpicks. Slice chicken in half and serve.
