Forget that this bread is paleo.  It is awesome!

For this recipe, you will need a 7.5 x 3.5 inch Magic Line loaf pan.  It is smaller than a regular loaf pan.

3 bananas  (about 1-1/2 c.)
3 large eggs
1 T. vanilla
1 T. honey or maple syrup
1/4 c. (50 grams) coconut oil (I used processed for neutral flavor)
2 c. (228 grams) blanched almond flour (must be blanched)
1/2 t. fine sea salt
1 t. baking soda
1/3 c. chopped walnuts or pecans, optional

  • Butter or grease 7.5 x 3.5 inch magic line loaf pan
  • Pulse together bananas, eggs, vanilla, honey/maple syrup, and shortening in a food processor
  • Pulse in almond flour, salt, and baking soda
  • Stir in nuts, if using
  • Scoop batter into prepared loaf pan
  • Bake at 350° for 55-60 minutes
  • Cool for 1 hour before removing from pan
