Who would have thought that chicken would make delicious breakfast sausage??? Not me until I tried this recipe. It’s guilt free eating – no additives!
1 lb. ground chicken
1/2 t. ground sage
1/2 t. marjoram
1/2 t. thyme
1 t. kosher salt
1/4 t. garlic powder
1 t. maple syrup
2 t. neutral oil
Mix all ingredients (including olive oil) together. If you have time, mix the sausage the night before, cover with plastic wrap, and cook sausage the next morning. If you make it the same day is ok, too.
Shape meat mixture into small, flat patties (this gives the sausage patty more browning surface).
Preheat skillet to medium heat. Add a little olive oil to the pan and cook patties until done, and browned on the outside, about 2 minutes on each side. Delicious!
