1 medium to large head cauliflower, cut into large florets
2-3 cloves garlic, sliced
1 t. kosher salt
2 T. butter, optional
Place trivet in Instant Pot, then place a steamer basket over that
Add 1 c. water to bottom of pot
Place cauliflower on top of steamer basket
Sprinkle garlic and salt over cauliflower
Close the lid, set the IP on manual high for 11 minutes
Turn off and let pressure naturally release for 2 minutes
Cauliflower should be fork tender with some resistance
Remove the steamer basket and empty the water
Thoroughly drain cauliflower and return to pot
Use an immersion blender to thoroughly process cauliflower until it looks like mashed potatoes
(Alternately you can use a food processor)
Taste and add more salt if needed
Stove-top Method
Fill large pot with 3/4″ water. Add 1/2 t. salt
Place steamer insert inside pot. Bring water to boil.
Add cauliflower and garlic and cover with lid.
Reduce heat and steam for about 10-15 minutes.
Insert blade in food processor.
Add steamed cauliflower, garlic, and butter.
Process until smooth. Taste and add more salt if needed.
If desired, add pepper.
Serve hot.
