1 – 14 oz can “Thai” brand coconut milk, full fat
2 t. vanilla
1 vanilla bean, split and scraped
1/2 c. orange juice concentrate
1 t. orange zest
2 T. agave or honey
Place 7 small ramekins in freezer
Whisk all ingredients in large bowl until incorporated.
Refrigerate 1 hour to cool (no longer)
Pour mixture into ice cream maker and follow manufacturer’s instructions
Working with two ramekins at a time
Place large scoop in frozen ramekin and place in freezer
Repeat with remaining ramekins
Let ice cream freeze at least one hour, then individually wrap each one with plastic wrap and return to freezer
Remove ramekins from freezer 20 minutes before serving, to soften somewhat
So good!
