A nice change from the traditional hummus.
1 15-oz can garbanzo beans, rinsed and drained
1 clove garlic, chopped
1/2 c. jarred red pepper, plus 1 T. oil from jar
1/6 c. tahini (half of a third measuring cup)
3 T. lemon juice
1/4 t. fine sea salt
1/4 t. chili powder
Place all ingredients in food processor and process until smooth. If too thick, add additional oil from red peppers.
Best if made a few hours ahead to let flavors develop. Pour a small amount of fine olive oil over hummus at serving time.
