1/2 c. unsweetened cocoa powder
4 oz. semisweet chocolate, chopped
1/2 c. butter
3/4 c. sugar
3 eggs, beaten
1 t. vanilla
Preheat oven to 300 degrees.
Grease 8″ round cake pan, line bottom with parchment paper, and grease again.
Dust paper and pan sides with cocoa powder.
Definitely adult chocolate cake. Very rich and light.
Heat chocolate and butter over saucepan of barely simmering water.
Whisk occasionally until melted. Remove from heat.
Whisk in cocoa powder until combined. Whisk in sugar until smooth.
Whisk in eggs and vanilla until fully incorporated.
Pour into prepared pan.
Bake for 32 minutes. Cool in pan 10 minutes.
Run thin knife around outer edges of cake pan.
Carefully turn cake out to wire rack, and remove parchment paper.
Cool completely before serving, at least one hour.
Dust with confectioners sugar and serve with whipped cream.
