My new spiralizer is so much fun.  The kids love it and it is a fun way for them to eat their veggies either raw or cooked.

Plan on 2 small zucchini or 1 large one per person.

Spiralize the zucchini on the C blade.  You can cut the zoodles or break them up if you wish.

Heat a large skillet over medium heat.
Add 2 T. olive oil and swirl in pan.
Add the zoodles and sprinkle with a pinch of kosher salt.

Cook zoodles, stirring, for 5-10 minutes, until they start to wilt.
Do not overcook because they will continue to cook down.
Pour out into a colander and let drain for a few minutes.
Lay zoodles on a few sheets of paper towels and squeeze excess water out.

Return zoodles to hot pan and add your favorite pesto.
Let the mixture cook a few minutes to let the flavors meld.
