This is a fast lane entree. Preparation is a snap and it’s big on flavor.
2 T. oil
1 T. lemon juice
1 t. rosemary
1⁄4 t. thyme
1⁄4 t. oregano
1⁄4 t. basil
1⁄4 t. paprika
1/2 t. onion powder
1 t. garlic powder
1⁄2 t. kosher salt
1⁄4 t. pepper
1 (1 lb) pork tenderloin, silver skin removed
Mix the first 11 ingredients.
Rub over the pork.
Put on a rack in a shallow roasting pan.
Bake, uncovered, at 425 for 25-35 minutes, until internal temperature reaches 140 degrees.
Remove from oven, tent with foil and let set for 10 minutes.
Try to recover juices from pan to serve with pork.
Slice into servings.
