My neighbor gave me these nuts one Christmas and I flipped over them. The balance between sweet, salty, and spices is perfect, and they are so easy to make.
1 lb. pecans
½ c. sugar (don’t skimp)
2-1/2 T. canola oil
1 T. vanilla
¾ t. salt
1/8 t. pepper
¼ t. coriander
¼ t. cinnamon
¼ t. nutmeg
¼ t. ground allspice
Preheat oven to 325 degrees
Line a large sheet pan with foil
Blanch nuts in boiling water for 1 minute; drain well
Place nuts into large mixing bowl
Combine sugar, oil, and vanilla and pour over nuts while still hot
Toss thoroughly and let stand for 10 minutes
Arrange nuts on baking sheet in single layer
Bake 30-35 minutes, turning every 10 minutes until brown and crispy
Place nuts back into large mixing bowl
Toss hot nuts with remaining seasonings
Let stand 5 minutes
Spread nuts back on sheet pan and let cool completely
Store in air tight container
