Notice that there is no salt added to this recipe. The grated Parmesan provides plenty of salty taste. If these nuggets are for adults, you can add some dried oregano and parsley.
1 c. (114 g.) Italian bread crumbs
1/2 c. (52 g.) grated Parmesan
1/2 c. melted butter
1 lb. boneless chicken breast
Preheat oven to 400 degrees
Line large baking sheet with aluminum foil and spray with cooking oil
Cut chicken into 1 – 1/2 inch sized nuggets
In gallon ziploc mix bread crumbs and Parmesan
Pat chicken dry with paper towel
Dip chicken pieces in melted butter,
and place in crumb mixture (5 at a time)
Place well coated pieces on prepared baking sheet
Bake for 15-20 minutes
If needed, turn broiler on for 1 minute
