- 2 apples, peeled, medium dice
- 2 T. butter
- Cinnamon, to taste
- 2½ cups old fashioned oats (200 grams)
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup milk
- 2 tsp. apple cider vinegar
- ¾ cup pumpkin puree
- 2 eggs
- 3 Tbsp pure maple syrup
- 2 Tbsp butter, ghee, or coconut oil
- 1½ tsp vanilla extract
- 1 ½ tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp cloves
- ¼ tsp nutmeg
Pour apple cider vinegar into milk while preparing the rest.
Heat skillet over medium heat
Add butter and apples
Sprinkle with cinnamon to taste (I go heavy)
Saute until semi-soft, about 6-8 minutes
Place oats in blender and pulverize into a fine oatmeal flour.
Add baking powder, baking soda, and salt and pulse to combine.
Add milk, pumpkin puree, eggs, syrup, butter/coconut oil, cider, vanilla, cinnamon, ginger, cloves, and nutmeg.
Puree 30 seconds, or until combined.
Stir in cooked apples.
Let mixture rest for about 5 minutes while you heat an electric griddle to 350 degrees, or large skillet over medium heat.
Grease the skillet with a little extra butter mixed with a little neutral oil.
Using a ice cream scoop, or 1/4 c. measuring cup, spoon batter into hot oil.
Cook 3-4 minutes, or until bubbles form on the surface.
Flip pancakes and cook another 1-2 minutes or until cooked through.
Remove to wire rack.
Repeat with remaining batter.
