Quick, easy, and it tastes delicious.

2 lbs. chicken thighs, skin removed
1/3 c. chicken broth
1 c. your favorite salsa, mine is Paul Newman’s
1 t. kosher salt

Taco Seasoning:

2 t. chili powder
1/2 t. smoked paprika
1/2 t. ground cumin
3/4 t. cornstarch or potato starch
1 t. kosher salt

Mix taco seasoning and set aside.

Sprinkle half of the salt on bottom sides of chicken thighs
Add broth to IP
Add chicken, bottom side down
Sprinkle top with other half of salt

Sprinkle chicken with taco seasoning
Pour salsa on top of chicken

Attach lid and cook on manual high for 30 minutes, NPR for 15 minutes
Remove chicken from liquid and shred
Place chicken in bowl and add 1/4 c. of liquid from pot.
