- 3 T. vegetable oil
- 1 c. uncooked long-grain rice
- 2 T. finely minced onion
- 1 clove garlic, crushed or finely minced
- 1/2 t. kosher salt
- 1/2 t. ground cumin
- 1/4 t. chili powder
- 1 c. water
- 1 c. reserved juices from 1 can diced tomatoes, drained
- 2 T. chopped, drained tomatoes (use the rest of the can for something else)
- 2 T. fresh cilantro, chopped

Heat oil in a large saucepan over medium heat and add rice
Stir and cook until rice starts to turn golden
Stir in onions and cook until tender
Add garlic and seasonings, stir, and cook for 30 seconds
Add the 2T. diced tomatoes and liquids, bring to a boil
Reduce heat to low, cover and simmer 15 minutes, or until cooked
Fluff with a fork and add cilantro
