This pudding is unbelievable! So easy to make, and very satisfying to your chocolate cravings! But you must have a high speed blender to make it.
1 – 14 oz. can full fat coconut milk
1/2 c. cocoa powder (I use Hershey’s Special Dark)
1/2 c. maple syrup (dark amber is best)
1/4 c. black chia seeds
1 t. vanilla extract
3/8 t. salt
Blend everything together in a high speed blender at high speed for about 1 minute until totally smooth
There should be no lumps of chia seeds
Divide into 6 ramekins and cover with plastic wrap
Chill at least 4-6 hours, best overnight
Keeps refrigerated for up to 3 days
