This Starbucks copycat recipe is so delicious and super easy! You will need a silicone egg mold for this Instant Pot recipe.
4 eggs
2 pinches salt
1/4 c. cottage cheese
1/2 c. cheddar or your favorite cheese
Add-ins like sausage, bacon, broccoli
Add 1 cup water to bottom of Instant Pot
Add eggs, salt, cottage cheese to small blender and blend until smooth
Spray egg mold with cooking spray
Fill each mold half way up with egg mix
Place add-ins in each mold
Pour rest of egg mixture in the molds
Tear a paper towel in half and place on top of the mold
Lay foil on top and securely seal edges around edges of mold
Set egg mold on trivet and lower into Instant Pot
Cook for 13 minutes (14 minutes for bigger large eggs) on steam setting
Let natural release for 10 minutes then instant release
Carefully remove lid and set in sink so as not to drip water on eggs
Remove mold with trivet from Instant Pot, remove foil and towel
With a fork, slip the egg out onto a plate covered with a paper towel
These are best served right away while they are warm, or can easily be reheated in the microwave
