This ice cream is so tasty and easy, I don’t know if I will go back to the cooked method!
This is a half recipe which makes it easier with a hand mixer. You can double it if you prefer. I may use the remaining half of the sweetened condensed milk to make cherry or peach ice cream. Yum!
1/2 can (6-3/4 ounces) 14 oz. can sweetened condensed milk (see note above)
1 cup COLD whipping cream
1 lb. ripe strawberries
Place a medium mixing bowl in the freezer to chill
Wash, core, and halve strawberries
Mash strawberries with potato masher, set aside
In the cold mixing bowl, combine milk and cream
Beat until stiff peaks form (start with slow and progress to high speed)
Fold in strawberries with the juices
Pour into freezable container and freeze at least 4 hours for soft serve
If frozen completely, set on counter for 30 minutes to soften.
