These are my husband’s favorite brownies. We always have a stash in the freezer, hence I cut them into very small squares:)
6 tablespoons unsalted butter, cut into cubes
8 oz. bittersweet chocolate, broken up
3/4 (150 grams) cup sugar
1/4 teaspoon salt
2 large eggs
1/3 c. (43 grams) flour
1/2 cup (60 grams) walnuts, toasted then chopped
Place rack in lower third of oven
Preheat oven to 325 degrees
Make a parchment paper sling for an 8×8 pan
Spray pan with oil, add sling, and spray again
Place chocolate and butter in large heatproof bowl over pot of GENTLY simmering water, and stir occasionally until smooth and melted.
Remove from heat and beat sugar and salt into chocolate mixture with wooden spoon
Beat in eggs, one at a time
Add flour and beat vigorously until batter is glossy and pulls away from bowl.
Gently stir in nuts.
Pour mixture into prepared pan
Tap pan on countertop to level batter
Bake for 30-35 minutes (mine is 32 minutes), until toothpick comes out moist, but not clean
Let cool in pan for 10 minutes
Remove brownies from pan using sling, slide off sling, and let cool on rack completely before cutting.
