This chicken is delicious. It is great on its own, in a burrito bowl or sliced in a salad.
4 limes
1/2 cup cilantro
1 teaspoon garlic powder
1/2 teaspoon salt, plus more for seasoning
2 tablespoons olive oil
4-5 chicken breast filets
Zest 2 of the limes, and juice all 4.
Whisk together lime juice, zest, cilantro, garlic powder, oil, and salt.
Place chicken in large ziploc bag and cover with marinade.
Squeeze chicken around to make sure all pieces are covered.
Place bag in a bowl in case it leaks.
Marinate in the refrigerator, 30 minutes to overnight.
Preheat an outdoor grill and lightly oil the grate.
Place chicken on grill and sprinkle with kosher salt.
Grill chicken, turning occasionally, until it reaches 150 degrees.
It will continue to cook when off grill.
Tent with foil, keep warm, and let rest 5 minutes before slicing.
Alternatively, you can pan fry in olive oil, preferably using a cast iron pan.
