This flat bread is easy to make, and tasty. Brushed with olive oil, sprinkled with salt and chopped parsley, it also makes a great snack with a yogurt dipping sauce.
500 g all purpose flour
5 fl. oz warm milk (about 110 degrees)
5 fl. oz warm water (about 110 degrees)
1 tsp salt
2 tbsp dry yeast
3 tbsp olive oil
chopped parsley
salt
Whisk dry ingredients in a large mixing bowl
Make a well and pour in warm milk and water
Stir with a fork until dough comes together
(if too dry, add a tiny bit of water – too wet, add more flour)
Pour in olive oil and mix in with your hand
Knead in the bowl for 10 minutes
Rub some oil over the dough, and cover with plastic wrap
Let rise in warm place for 1 hour
Scrape dough onto lightly floured surface
Form into a flat circle
With a bench scraper or knife, cut into 8 wedges
Form dough into a flat circle with your hands
Roll out dough to a thin thickness
Heat cast iron skillet thoroughly on medium heat
Add dough and dry cook for 2-1/2 to 3 minutes on each side
Remove cooked dough to plate
Brush with olive oil
Sprinkle with salt and parsley and serve.
