This is my husband’s comfort food, served with a big pile of mashed potatoes and gravy. So easy to make!

Meat Patties:

1 1/2 pounds ground chuck (80/20)
1/2 cup seasoned breadcrumbs
1 tablespoon ketchup
2 teaspoons mustard
4 dashes Worcestershire sauce
3/4 teaspoon kosher salt
2 tablespoons oil
1 tablespoon butter

Gravy:

8 oz. sliced mushrooms (optional)
1/2 onion, chopped
3 tablespoons flour
2 cups beef stock (50% less salt)
3 tablespoons butter, room temperature
salt and pepper to taste

For the meat mixture:

Combine the ground chuck, breadcrumbs, ketchup, mustard, Worcestershire sauce, and some salt. Knead until all combined. 7 oval patties.

Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until they reach 130 degrees. Remove from the skillet and pour enough grease to leave 3 tablespoons in the pan.

For the gravy:

Reduce the heat to medium and add in the mushrooms and onions. Stir and cook until onions are golden brown and somewhat soft, for several minutes. Add the flour and whisk, cooking the flour mixture a few minutes. Whisk in the beef stock. Stir and cook to reduce until it thickens moderately. Off the heat, whisk in butter, 1 tablespoon at a time.

Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.
