Couldn’t believe how good these pancakes were. The epitome of everything a pancake should be!
- 125g flour - 1 tsp baking powder - pinch of salt - 1 tbsp of sugar or monk fruit - 2 eggs, separated - 100ml whole milk - 125g ricotta cheese - 140g fresh blueberries + some to serve - oil and butter for frying Sift dry ingredients Make a well in center and add egg yolks Gradually add milk and whisk slowly Fold in ricotta and blueberries In separate bowl, beat egg whites until almost soft peaks Fold a spoonful of egg whites into pancake mix to loosen slightly Fold in rest of egg whites Heat griddle to medium heat or 350 degrees Add a tablespoon of neutral oil and butter Using a cupcake scoop, fill 2/3 with batter Cook a couple of minutes on each side Adapted from Gordon Ramsay's Ultimate Cookery Course
