This fish couldn’t be much easier. The mayo may sound strange, but trust me, it works!

4 medium sized pieces of cod filet (if pieces are fat, cut in half)
kosher salt
2 cups Italian flavored Panko breadcrumbs
1 lemon, juiced and zested
1/4 cup mayonnaise
2 tablespooons fresh chopped parsley

Preheat air fryer to 380 degrees.
Mix lemon juice, zest, and 1 teaspoon salt with breadcrumbs
Pat cod dry and sprinkle with kosher salt
Spread mayo over entire piece
Press into breadcrumbs, coating every side well
Place on a plate and repeat with remaining cod.

Set a liner in the air fryer and spray with oil
Place cod on top of liner and spritz top with oil
Check cod after 3 minutes.
When top is golden, flip cod and spray the other side with oil.

NOTE: Be careful. You do not want to overcook the fish.

Air fry another 3 minutes, then remove cod to paper towels.
Serve hot.
